What to know
What actually makes a bar chewy
Chewiness mostly comes down to moisture retention and protein source. Bars built on whey protein concentrate, or blended with glycerin and sugar alcohols, tend to stay softer and more pliable than bars built on isolate alone, which can dry out and turn crumbly faster.
Storage matters too. Even a genuinely fudgey bar can turn firm if left in a hot car or a cold gym bag for too long, since the fats and sugar alcohols that create the chewy texture are sensitive to temperature.
We score texture and mouthfeel as one of our four pillars, independent of flavor, so a bar can score well on taste but still lose points here if the texture does not match what chewy or fudgey promises.
What to check before you buy
- Protein blends, rather than a single isolate, tend to produce a softer, chewier texture.
- Store bars at room temperature when possible. Heat and cold both change texture more than most people expect.
- Check our texture score specifically if chewiness matters more to you than flavor, since we score them separately.
