What to know

Real chocolate coating versus "chocolate flavored"

In the United States, the word chocolate is legally defined. The FDA's standards of identity for chocolate products require actual cocoa butter. A coating that swaps cocoa butter for vegetable fat legally has to be called something else, such as compound coating or chocolatey, not chocolate.

This matters for both taste and ingredient quality. Compound coatings are cheaper and more heat-stable, meaning less likely to melt in a gym bag, which is part of why some protein bars use them even though the flavor and mouthfeel are noticeably different from real chocolate.

We note which bars use real chocolate versus a compound coating in the ingredient breakdown, and score taste and ingredients independently.

What to check before you buy

  • Check the ingredient list for cocoa butter versus vegetable oil or palm kernel oil in the coating. Only the first is legally allowed to be called chocolate.
  • Compound coatings hold up better to heat, which matters if you are carrying a bar in a hot car or gym bag.
  • Real chocolate coatings generally taste richer but can be more prone to melting or developing a whitish surface film called bloom in warm conditions.

Frequently asked questions

How did you pick these bars?

Every bar was bought at retail and scored 1–10 on four pillars: macro profile, taste and flavor accuracy, texture and mouthfeel, and ingredients and digestibility. The overall score is the straight average. Scores and rankings are never for sale.

What do the score badges mean?

9.0 and above earns Top Pick. 7.5–8.9 is Recommended. 6.0–7.4 gets a Caution, usually a macro or ingredient trade-off worth knowing about. Below 6.0, we tell you to skip it.

What is the difference between chocolate and "chocolate flavored" coating?

Real chocolate legally requires cocoa butter under FDA standards of identity. Coatings made with vegetable fat instead must be labeled differently, such as compound coating.

Why do some protein bars use compound coating instead of real chocolate?

Cost and heat stability. Compound coatings hold up better in warm conditions like a gym bag or hot car.

Does compound coating taste different from real chocolate?

Yes, generally. Real cocoa butter produces a richer flavor and different mouthfeel than a vegetable-fat coating.
